Management to retool Swan Lake Bistro, add affordability to menu

The Swan Lake Bistro restaurant at the Gaia Hotel in Anderson was open nearly three months before management decided to change it. Anderson's only fine dining establishment will soon be converted into a bar and grill.

"We're going away from fine dining, but we're going to keep the sophistication," said Ramien Shalizi, general manager of Swan Lake Bistro and Corporate Director of Food and Beverage of Broughton Management. Shalizi said the new menu would be "down to earth" and the pricing would be "as reasonable as possible" when the restaurant changes direction in May.

Pricing for dinner would range from $13.95 to $22.95, with a variety of grilled steaks and fresh salads available, Shalizi said.

"We're going to offer an affordable price point . . . so people can afford it (on a regular basis)," Shalizi said. "We have already lowered the prices of (alcoholic) drinks, and if you order a double, it is 75 percent off."

Even the restaurant's name and decor would be revamped. A new chef in also in the works for the restaurant, said Shalizi.

Swan Lake remains open until then. More information about the new chef and restaurant changes are to be unveiled at the next grand opening.

Hotel management firm Broughton Hospitality was hired in January 2009 to run the hotel and restaurant in Anderson, said Yuan-Sing Chang, Development Project Manager of Atman Hospitality Group, Inc.
